Ingredients

  • 1 cooked hen, stewed
  • broth from hen
  • 3/4 cup cooked white rice
  • 7 to 8 homemade biscuits
  • 1 cake pan muffin-type egg cornbread
  • 3 slices light bread
  • 1 cup finely chopped celery
  • 1 cup finely chopped onion

Instructions

  1. Mix rice, crumbled biscuits, crumbled muffin bread, torn light bread, chopped celery, chopped onions, and eggs in a large bowl.
  2. Add broth from the stewed hen to the mixture and allow some evaporation during baking.
  3. Pour the mixture into a greased baking pan.
  4. Arrange pieces of hen on top of the dressing if desired.
  5. Bake in a preheated oven at 400°F for 15 minutes.
  6. Reduce oven temperature to 350°F and bake for an additional 30 minutes until golden and cooked through.
