- Preheat your oven and prepare a large jelly roll pan or two smaller pans, well-oiled.
- In a large mixing bowl, beat the eggs and sugar until well combined and slightly frothy.
- Add the oil and mix thoroughly.
- In a separate bowl, combine the baking powder with the flour, then gradually add to the wet ingredients, mixing until a dough forms.
- Fold in the chopped walnuts.
- Press the dough evenly into the prepared jelly roll pan(s).
- Bake until golden and firm, approximately 20-25 minutes.
- Remove from oven and let cool slightly.
- Slice into diagonal strips while warm, then bake the strips for an additional 10-15 minutes until crisp.
