Ingredients

  • 6 eggs
  • 12 large heaping Tbsp sugar
  • 3/4 cup oil
  • 2 heaping tsp baking powder
  • 1/4 lb chopped walnuts
  • flour
  • chocolate for dipping

Instructions

  1. Preheat your oven and prepare a large jelly roll pan or two smaller pans, well-oiled.
  2. In a large mixing bowl, beat the eggs and sugar until well combined and slightly frothy.
  3. Add the oil and mix thoroughly.
  4. In a separate bowl, combine the baking powder with the flour, then gradually add to the wet ingredients, mixing until a dough forms.
  5. Fold in the chopped walnuts.
  6. Press the dough evenly into the prepared jelly roll pan(s).
  7. Bake until golden and firm, approximately 20-25 minutes.
  8. Remove from oven and let cool slightly.
  9. Slice into diagonal strips while warm, then bake the strips for an additional 10-15 minutes until crisp.
  10. Allow to cool completely before dipping in melted chocolate, if desired.
