Ingredients

  • 8 cups potatoes, cubed and cooked
  • 1 (10 3/4 oz.) can cream of celery soup
  • 1/2 cup milk
  • 1/2 cup green pepper, diced
  • 1 (3 oz.) jar pimentos, chopped
  • 1/2 stick margarine, melted
  • 1 cup Cheddar cheese, grated
  • salt and pepper to taste
  • 1/4 cup fine bread crumbs

Instructions

  1. Cook potatoes in boiling salted water until tender.
  2. Drain the potatoes.
  3. Dilute the cream of celery soup with milk.
  4. Fold the soup mixture into the cooked potatoes along with diced green pepper, chopped pimentos, melted margarine, and grated cheddar cheese.
  5. Pour the mixture into a greased casserole dish.
  6. Sprinkle the top with fine bread crumbs.
  7. Bake at 350°F for 30 minutes until golden and bubbly.
