Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup butter (room temperature)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon grated lemon rind
  • 1/3 cup sugar
  • 1/2 cup milk
  • 3 green cooking apples
  • 1/4 cup sugar
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice

Instructions

  1. Mix together flour, baking powder, and salt. Set aside.
  2. Cream butter, vanilla extract, grated lemon rind, and 1/2 cup sugar until well blended.
  3. Add an egg and beat until fluffy.
  4. Add the flour mixture to the creamed mixture and mix until a smooth batter forms.
  5. Pare, core, and quarter the apples.
  6. Arrange the apples in the bottom of an 8-inch quiche pan, shallow casserole, or pie pan.
  7. Mix 1/4 cup sugar with cloves, nutmeg, and allspice.
  8. Sprinkle half of the spiced sugar mixture over the apples in the pan.
  9. Pour the batter over the apples.
  10. Sprinkle with the remaining spiced sugar mixture.
  11. Bake at 375°F (190°C) for 40 to 45 minutes or until a cake tester comes out clean.
  12. Serve hot with lightly whipped cream and a sprinkling of cinnamon.
  13. Optionally, sifted confectioners' sugar can be sprinkled over the top.
  14. This pudding is also good as coffee cake the next day.
