Ingredients

  • 8 manicotti shells
  • 2 cups small curd cottage cheese
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/8 teaspoon salt
  • 1 egg, beaten
  • 1 (15 oz) jar marinara sauce
  • 1 (10 oz) package frozen chopped spinach
  • 1 green onion, sliced

Instructions

  1. Cook manicotti shells as directed on the package, then rinse with cold water and drain.
  2. Combine cottage cheese, cream cheese, beaten egg, sliced green onion, salt, and grated Parmesan cheese in a bowl.
  3. Fill the cooked manicotti shells with the cheese mixture and place them in a lightly oiled baking dish.
  4. Pour marinara sauce over the filled shells and sprinkle remaining Parmesan cheese on top.
  5. Bake at 350°F (175°C) for 25 to 30 minutes until bubbly and heated through.
  6. Cook frozen chopped spinach as directed on the package, then spoon it over the baked manicotti before serving.
