Ingredients

  • 3/4 cup cornmeal
  • 1/4 cup milk
  • 2 eggs
  • 1/4 cup butter or margarine
  • 1/3 cup maple syrup
  • 1 tablespoon baking powder
  • 1 cup sifted flour
  • 1 tablespoon sugar

Instructions

  1. Mix cornmeal and milk; set aside.
  2. In another bowl, beat eggs.
  3. Add butter or margarine and cream together.
  4. Add maple syrup, baking powder, sifted flour, and sugar, mixing thoroughly after each addition.
  5. Add the cornmeal and milk mixture and stir to form a lumpy batter.
  6. Scoop into a greased loaf pan.
  7. Bake for 35 to 40 minutes or until a knife inserted comes out clean.
  8. Cool about 15 minutes before slicing.
