Sweet and savory maple glazed acorn squash features tender roasted squash filled with a buttery, cinnamon-spiced maple mixture, perfect as a cozy side for pork or poultry dishes.

Ingredients

  • 3 small acorn squash
  • 6 Tbsp butter or margarine
  • 1/3 cup maple syrup
  • 1 Tbsp brown sugar
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp ground ginger

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Halve the acorn squash and remove seeds and fiber.
  3. Place the squash halves in a shallow baking pan, cut side down.
  4. Add 1/2 inch of water to the pan and bake for 30 minutes.
  5. Remove squash from the pan and discard the water.
  6. Trim a small slice from the bottom of each squash so they sit straight.
  7. Combine remaining ingredients (butter, maple syrup, brown sugar, salt, cinnamon, ground ginger).
  8. Spoon the mixture into the centers of the squash halves.
  9. Bake for an additional 15 to 20 minutes, basting frequently.
