Ingredients

  • 3 yellow squash, sliced
  • 1 small onion, sliced
  • 2 tomatoes, sliced
  • 1 medium green pepper, sliced
  • 1 stalk celery, sliced
  • 2 tsp salt
  • 1/2 tsp pepper
  • 2 Tbsp uncooked regular rice
  • 2 Tbsp butter or margarine
  • 1 Tbsp brown sugar

Instructions

  1. Combine all ingredients except butter and brown sugar in a 1 1/2-quart casserole.
  2. Dot with butter and sprinkle with brown sugar.
  3. Bake, covered, at 350°F for 45 to 50 minutes.
