Ingredients

  • 2 Tbsp. shortening
  • 2 1/2 cups white cornmeal
  • 1 scant teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 cups sour milk
  • 1 egg
  • 2 Tbsp. melted butter

Instructions

  1. Grease muffin pan generously with shortening.
  2. Set the oven to 400°F (200°C).
  3. Sift together the cornmeal, salt, baking soda, and baking powder into a mixing bowl.
  4. Add the sour milk and stir well to combine.
  5. Add the beaten egg and melted butter, mixing until smooth.
  6. Heat the greased muffin pan very hot in the oven.
  7. Fill each muffin cup with the batter.
  8. Bake in the 400°F oven for 20 to 25 minutes until golden and cooked through.
  9. Serve hot.
