Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup shortening
  • 1/4 cup sugar
  • 3/4 cup maple syrup
  • 2 eggs
  • 3/4 cup applesauce

Instructions

  1. Stir together flour, baking powder, salt, and cinnamon.
  2. Cream shortening and sugar until fluffy.
  3. Add maple syrup; stir in eggs and applesauce.
  4. Mixture tends to curdle.
  5. Stir in the flour mixture.
  6. Fill greased muffin cups two-thirds full.
  7. Bake in a 375°F oven for 20 minutes.
