Ingredients

  • 2 c. flour
  • 1 1/2 c. sugar
  • 3 tsp. double action baking powder
  • 1 tsp. salt
  • 1/2 c. cooking oil
  • 6 egg yolks
  • 3/4 c. cold water
  • 1/2 tsp. maple extract
  • 1 tsp. vanilla
  • 1 c. pecans or walnuts, chopped fine
  • 1 c. egg whites
  • 1/2 tsp. cream of tartar

Instructions

  1. Beat egg whites and cream of tartar in a large bowl until very stiff.
  2. In a separate bowl, combine egg yolks, sugar, water, maple extract, vanilla, cooking oil, flour, salt, and chopped nuts until well mixed.
  3. Gently fold the egg yolk mixture into the beaten egg whites using a rubber spatula, folding carefully to maintain volume.
  4. Pour the batter into an ungreased pan.
  5. Bake in a preheated oven at 350°F (175°C) for 1 hour and 15 minutes.
