Ingredients

  • 4 c. pure maple syrup
  • 1 c. heavy cream
  • 1/4 c. unsalted butter
  • 1 c. coarsely chopped pecans
  • 1 tsp. lemon extract

Instructions

  1. Liberally grease an 8-inch square pan with butter.
  2. In a heavy saucepan, combine maple syrup, heavy cream, and unsalted butter.
  3. Cook over moderate heat, stirring constantly, until mixture comes to a boil. Continue cooking for 9 minutes, stirring often.
  4. Remove the pan from the heat.
  5. Stir in the chopped pecans and lemon extract.
  6. Stir the mixture for 5 minutes.
  7. Pour the candy into the prepared pan.
  8. When completely cool, cut into squares.
