Ingredients

  • 2 Tbsp. butter, melted
  • 3 scallions
  • 2 Tbsp. flour
  • 2 c. milk
  • 4 eggs
  • 1 tsp. salt
  • fresh ground pepper
  • 1/2 tsp. nutmeg
  • 4 c. fresh corn kernels

Instructions

  1. Preheat oven to 375°F.
  2. Grease a baking dish.
  3. Melt 1 tablespoon of butter in a small skillet over medium heat.
  4. Add scallions and cook for 4 minutes.
  5. In a small bowl, whisk together flour and 1/2 cup of milk until smooth.
  6. In a large bowl, whisk together eggs, remaining milk, salt, pepper, and nutmeg.
  7. Add the flour and milk mixture plus the remaining 1 tablespoon melted butter to the eggs and seasonings. Whisk well to combine.
  8. Quickly stir in corn kernels and cooked scallions.
  9. Pour the mixture into the prepared baking dish.
  10. Bake for 50 minutes to 1 hour, until it jiggles slightly but is not liquid in the center.
