Amish Corn Pudding

- Preheat oven to 375°F.
- Grease a baking dish.
- Melt 1 tablespoon of butter in a small skillet over medium heat.
- Add scallions and cook for 4 minutes.
- In a small bowl, whisk together flour and 1/2 cup of milk until smooth.
- In a large bowl, whisk together eggs, remaining milk, salt, pepper, and nutmeg.
- Add the flour and milk mixture plus the remaining 1 tablespoon melted butter to the eggs and seasonings. Whisk well to combine.
- Quickly stir in corn kernels and cooked scallions.
- Pour the mixture into the prepared baking dish.
- Bake for 50 minutes to 1 hour, until it jiggles slightly but is not liquid in the center.
