Ingredients

  • 4 medium potatoes, peeled and cubed
  • 2 medium onions, chopped
  • 1/2 cup butter or margarine
  • 3/4 cup all-purpose flour
  • 2 quarts milk
  • 3 (6 1/2 oz.) cans chopped clams (undrained)
  • 2 teaspoons salt
  • 1 teaspoon ground sage
  • 1 teaspoon ground thyme
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon black or white pepper

Instructions

  1. Place potatoes in a saucepan and cover with water. Bring to a boil; cover and cook until tender.
  2. In a large pot, melt butter or margarine over medium heat.
  3. Add chopped onions and cook until translucent.
  4. Stir in flour and cook, stirring constantly, for 1-2 minutes.
  5. Gradually whisk in milk, stirring constantly to prevent lumps.
  6. Add the cooked potatoes, chopped clams (with undrained juice), salt, ground sage, ground thyme, celery salt, and black or white pepper.
  7. Bring the mixture to a gentle simmer and cook for about 10-15 minutes, stirring occasionally.
  8. Serve hot.
