Maple Zucchini Cake
Ingredients

- 2 cups shredded zucchini ⓘ
- 1 cup sugar ⓘ
- 1 cup vegetable oil ⓘ
- 1 cup maple syrup ⓘ
- 3 teaspoons ground cinnamon ⓘ
- 2 teaspoons vanilla extract ⓘ
- 2 teaspoons baking soda ⓘ
- 1 teaspoon baking powder ⓘ
- 1 teaspoon salt ⓘ
- 1-1/2 cups chopped walnuts ⓘ
- 1 cup raisins ⓘ
- Prepared cream cheese frosting ⓘ
Instructions
- In a large bowl, combine the first 11 ingredients; beat on medium speed for 1-2 minutes or until well blended. Fold on walnuts and raisins.
