Mardi Gras Slaw
A vibrant and tangy slaw inspired by Mardi Gras flavors, featuring colorful cabbage, fresh herbs, and a zesty vinegar dressing, perfect for gatherings and lively meals.
Ingredients
- 2 c. thinly chopped or grated red cabbage ⓘ
- 4 c. thinly chopped or grated green cabbage ⓘ
- 1 cucumber, peeled and grated ⓘ
- 1 c. grated red onion ⓘ
- 1/2 tsp. salt ⓘ
- 1 carrot, grated
- 1/2 c. chopped celery leaves
- 1/2 c. chopped cilantro ⓘ
- 2 Tbsp. chopped, fresh dill ⓘ
- 2 Tbsp. chopped, fresh Italian parsley ⓘ
- 1/2 c. vinegar ⓘ
Instructions
- Mix all of the vegetables and sprinkle in the salt.
- Squeeze by hand until the cabbage 'weeps'.
- Drain the liquid and add remaining ingredients, mixing by hand or with a wooden spoon.
- Add freshly ground pepper to taste.
