  4. Heat the remaining oil in the skillet, add eggplant cubes and sliced zucchini; stir-fry for 4 minutes until tender.
  5. Return the mushroom mixture to the skillet.
  6. Add the tomatoes, dried thyme, and basil to the skillet.
  7. Cover and simmer for 5 minutes.
  8. Season with salt and pepper to taste.
