Ingredients

  • 16 oz. cans white Shoepeg corn
  • 16 oz. cans white corn
  • 16 oz. cans yellow corn
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 small jar chopped pimento
  • 1/2 cup oil

Instructions

  1. Drain the canned white and yellow corn.
  2. In a large bowl, mix the drained corn with chopped green pepper, onion, celery, and chopped pimento.
  3. In a separate bowl, combine oil, vinegar, and sugar to make the marinade.
  4. Pour the marinade over the corn mixture and stir well to coat.
  5. Marinate in the refrigerator for 24 hours.
  6. Serve chilled.
