Ingredients

  • 1/3 c. olive oil
  • 2/3 c. vinegar
  • 3/4 c. sugar
  • 1 tsp. pepper
  • 1 Tbsp. salt
  • 6 to 8 cucumbers
  • 1 sweet onion

Instructions

  1. Slice cucumbers and onion.
  2. Sprinkle with salt and soak overnight.
  3. Drain well.
  4. Mix vinegar, oil, sugar, and pepper.
  5. Pour over drained cucumbers.
  6. Place in jar and refrigerate.
  7. Keeps for months in the refrigerator.
