Ingredients

  • 12 to 16 lb. beef tenderloin
  • garlic salt
  • red pepper
  • black pepper
  • 16 oz. olive oil
  • 16 oz. red wine vinegar
  • 3 cups Burgundy wine

Instructions

  1. Sprinkle the beef tenderloin with garlic salt, red pepper, and black pepper.
  2. Combine olive oil, red wine vinegar, Burgundy wine, and garlic; stir well.
  3. Pour the marinade over the meat.
  4. Cover with foil and refrigerate overnight.
  5. Bake at 425°F; do not drain the marinade.
  6. Cook to desired doneness: 140°F for rare or 160°F for medium.
