Ingredients

  • 3 c. cauliflower florets
  • 3 c. broccoli florets
  • 1 c. mushrooms, halved if large
  • 1 c. carrot coins
  • 1 red onion, thinly sliced
  • 1/2 c. red pepper strips
  • 1 c. Mazola corn oil
  • 1/2 c. red wine vinegar
  • 2 tsp. sugar
  • 1 tsp. salt
  • 1 tsp. dried dill weed
  • 1/2 tsp. dry mustard powder
  • 1/2 tsp. dried thyme leaves
  • 1/2 tsp. paprika
  • 1/8 tsp. pepper

Instructions

  1. Combine all vegetables in a large salad bowl.
  2. Combine the remaining ingredients in a jar with a tight-fitting lid.
  3. Shake well and pour over the vegetables.
  4. Marinate for 3 to 4 hours before serving.
