Ingredients
- 3 c. cauliflower florets
- 3 c. broccoli florets ⓘ
- 1 c. mushrooms, halved if large ⓘ
- 1 c. carrot coins ⓘ
- 1 red onion, thinly sliced ⓘ
- 1/2 c. red pepper strips ⓘ
- 1 c. Mazola corn oil
- 1/2 c. red wine vinegar ⓘ
- 2 tsp. sugar ⓘ
- 1 tsp. salt ⓘ
- 1 tsp. dried dill weed
- 1/2 tsp. dry mustard powder ⓘ
- 1/2 tsp. dried thyme leaves ⓘ
- 1/2 tsp. paprika ⓘ
- 1/8 tsp. pepper ⓘ
Instructions
- Combine all vegetables in a large salad bowl.
- Combine the remaining ingredients in a jar with a tight-fitting lid.
- Shake well and pour over the vegetables.
- Marinate for 3 to 4 hours before serving.
