A vibrant, sugar-free marinated vegetable salad combining peas, corn, green beans, and pimento with a tangy vinegar dressing, perfect for light, healthy meals or side dishes.

Ingredients

  • 1 can LeSueur peas
  • 1 can whole kernel corn
  • 1 can French-cut green beans
  • 1 (2 oz.) jar pimento
  • 1/2 cup celery
  • 1/2 cup onion
  • 1/2 cup carrots
  • 10 to 12 packets Equal sweetener
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup vinegar
  • 1 tablespoon oil

Instructions

  1. Drain peas, corn, green beans, and pimento.
  2. Dice celery, onion, and carrots.
  3. Mix all of the ingredients together in a bowl.
  4. Add Equal sweetener, salt, pepper, vinegar, and oil.
  5. Stir well to combine.
  6. Put in refrigerator and chill before serving. Will keep several days.
