Ingredients

  • 3 to 4 large potatoes, cut into 1½-inch pieces
  • 1 large onion, chopped
  • 1 Tbsp. chopped parsley
  • ½ to ¾ stick butter
  • ¾ cup grated Cheddar cheese

Instructions

  1. Boil the potatoes; drain and set aside.
  2. In a saucepan over low heat, melt the butter, then sauté the chopped onion in the butter until translucent.
  3. Add the grated Cheddar cheese and chopped parsley; stir until the cheese melts.
  4. Add the cooked potatoes and coat them with the cheese mixture.
  5. Can be served as is or placed in the oven to brown the cheese on top of the potatoes.
