Ingredients

  • 1/2 cup margarine
  • 1 cup brown sugar
  • 1 egg
  • 1 1/2 cups milk
  • 1 tablespoon white vinegar
  • 1 cup chopped figs
  • 1 cup chopped walnuts
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Spray loaf pan with non-stick spray or line with parchment paper.
  2. Cream margarine until fluffy.
  3. Beat in brown sugar and egg until well combined.
  4. Stir in milk and white vinegar.
  5. Gradually add sifted dry ingredients and blend until well mixed.
  6. Fold in chopped walnuts and chopped figs.
  7. Pour batter into prepared loaf pan.
  8. Bake at 350°F (175°C) for 1 hour to 1 hour and 15 minutes, or until the center is firm.
  9. Allow the bread to cool in the pan for a few minutes, then remove and cool completely.
  10. Slice thin and serve with butter or whipped cream cheese.
