Ingredients

  • 3 cups flour
  • 1 teaspoon salt
  • 1 (1 lb.) jar orange marmalade
  • 1/4 cup oil
  • 3 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 beaten egg
  • 3/4 cup orange juice
  • 1 cup chopped walnuts

Instructions

  1. Sift together the flour, salt, baking powder, and baking soda.
  2. Reserve 1/4 cup of marmalade. Combine the remaining 1 1/4 cups of marmalade, beaten egg, orange juice, and oil.
  3. Add the wet mixture to the dry ingredients, stirring until just moistened.
  4. Stir in the chopped walnuts.
  5. Turn the batter into a greased 9 1/2 x 5 x 3-inch loaf pan.
  6. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
  7. Remove from the pan and place on a baking sheet.
  8. Spread the reserved marmalade over the top of the loaf and return to the oven for 1 minute to glaze.
  9. Cool before slicing and serving.
