Ingredients

  • 7 medium potatoes
  • 1 onion
  • 4 slices bread
  • 1 tsp. parsley flakes
  • 1 small can pimento
  • 1/2 lb. Velveeta cheese
  • 1 tsp. salt
  • pepper
  • 3/4 cup milk
  • 1/2 cup butter
  • crushed corn flakes

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Boil potatoes in skins until tender, then peel and dice.
  3. In a mixing bowl, combine diced potatoes, diced onion, pimento, Velveeta cheese, parsley flakes, salt, and pepper.
  4. Gradually stir in milk until mixture is creamy.
  5. Transfer the mixture to a greased baking dish.
  6. Top with cubed bread and crushed corn flakes.
  7. Bake in the preheated oven for about 45 minutes until bubbly and golden.
