Ingredients

  • 1 quart bite-sized lettuce
  • 1 cup chopped green bell pepper
  • 1 cup chopped celery
  • 10 oz frozen peas, thawed
  • 1/4 cup minced onion
  • 10 hard-boiled eggs, sliced
  • 1 cup shredded Cheddar cheese
  • 16 oz light buttermilk salad dressing

Instructions

  1. Layer lettuce, green pepper, celery, peas, and onion in a large salad bowl.
  2. Reserve the center slices of eggs for garnish.
  3. Layer the remaining egg slices and half the cheese over the vegetables.
  4. Spread the dressing over the salad, sealing it to the edge.
  5. Sprinkle with the remaining cheese.
  6. Chill, covered, for 2 hours to overnight.
  7. Garnish with reserved egg slices and parsley before serving.
