Ingredients

  • 6 firm red peppers
  • 1/4 cup oil
  • 1/4 cup vinegar
  • 4 garlic cloves
  • 1 tablespoon chopped parsley
  • freshly ground black pepper

Instructions

  1. Place washed peppers on a baking sheet in the oven on the top rack and broil at 500°F.
  2. As they char, keep turning until almost completely black.
  3. Remove from oven and let cool.
  4. Remove the core and seeds under running water, allowing the outer skin to come off easily.
  5. Slice each pepper into 6 pieces.
  6. Add all other ingredients and let marinate for at least 2 hours.
