Ingredients

  • 4 cups All-Bran cereal
  • 1 cup boiling water
  • 1/2 cup cooking oil
  • 2 1/2 teaspoons baking soda
  • 2 eggs
  • 1 cup sugar
  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 2 cups buttermilk
  • raisins (optional)

Instructions

  1. Pour boiling water over 1 cup of bran cereal and let stand.
  2. Mix sugar, oil, and beaten eggs; alternate adding this mixture with buttermilk to sifted dry ingredients.
  3. Add the bran mixture, then remaining bran cereal. Cover tightly and store in refrigerator for a minimum of 12 hours or up to 6 weeks.
  4. Preheat oven to 400°F and let the mixture thaw for approximately 25 minutes.
  5. Grease muffin tins and spoon the batter into tins, filling them two-thirds full.
  6. Bake for 18 minutes for regular muffins or 20 to 25 minutes for smaller muffins.
  7. Remove from oven and let cool slightly before serving.
