- Pour boiling water over 1 cup of bran cereal and let stand.
- Mix sugar, oil, and beaten eggs; alternate adding this mixture with buttermilk to sifted dry ingredients.
- Add the bran mixture, then remaining bran cereal. Cover tightly and store in refrigerator for a minimum of 12 hours or up to 6 weeks.
- Preheat oven to 400°F and let the mixture thaw for approximately 25 minutes.
- Grease muffin tins and spoon the batter into tins, filling them two-thirds full.
- Bake for 18 minutes for regular muffins or 20 to 25 minutes for smaller muffins.
- Remove from oven and let cool slightly before serving.
