Ingredients

  • 2 sticks butter
  • 2 cups sugar
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (8 oz) container pineapple yogurt
  • 3 eggs
  • 1 teaspoon grated lemon
  • 1 teaspoon vanilla
  • 1/2 cup confectioners' sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Grease a Bundt pan.
  3. Beat butter, sugar, flour, baking soda, salt, pineapple yogurt, eggs, and vanilla on low speed in a large bowl.
  4. Sift the flour twice.
  5. Blend well.
  6. Increase speed to medium and beat for 3 minutes.
  7. Pour batter into the prepared Bundt pan.
  8. Bake at 325°F (160°C) for 50 to 60 minutes.
  9. Allow the cake to cool.
  10. Mix together confectioners' sugar and lemon juice in a small bowl until smooth.
  11. Drizzle the glaze over the cooled cake.
