A hearty, colorful pasta salad combining tender macaroni, shredded chicken, crunchy peas, and fresh vegetables, perfect for casual gatherings or light lunches.

Ingredients

  • 1 to 1 1/4 cups macaroni
  • 1/2 package Dixianna peas
  • 1 can Swanson chicken in water
  • 2 or 3 hard-boiled eggs
  • chopped lettuce
  • pimiento or tomato (optional)
  • low-calorie mayonnaise

Instructions

  1. Cook the macaroni in boiling water for 10 minutes, then drain and set aside to cool.
  2. Cook the peas in the microwave on High for 4 1/2 minutes, then refrigerate to cool.
  3. Drain the canned chicken in water and set aside.
  4. Chop the hard-boiled eggs.
  5. In a large bowl, combine the cooked macaroni, peas, chicken, chopped eggs, chopped lettuce, and pimiento or tomato if preferred.
  6. Add low-calorie mayonnaise and mix all ingredients thoroughly.
  7. Serve immediately or chill before serving.
