Ingredients

  • 1 lb. ground beef
  • 4 c. hot tap water
  • 1 (2.7 oz.) box Swiss Knorr tomato soup with basil soup mix
  • 1 (12 oz.) can corn
  • 1 small package green beans
  • 1/2 tsp. thyme
  • 1/4 tsp. pepper
  • 3 beef bouillon cubes
  • 1 (16 oz.) can stewed tomatoes
  • 2 potatoes, cooked

Instructions

  1. Put water, soup mix, and bouillon cubes in a 4-quart saucepan and bring to a boil.
  2. Cover and simmer on low heat.
  3. Add corn, green beans, stewed tomatoes, cooked potatoes, thyme, and pepper into the soup.
  4. Mix ground beef with garlic to form a mixture.
  5. Shape the beef mixture into heaping tablespoonfuls and push into the hot soup.
  6. Simmer until the meatballs are no longer pink and cooked through.
