Ingredients

  • 3 Tbsp. butter
  • 1 tsp. garlic, chopped
  • 1 c. apple, diced
  • 3/4 tsp. dry mustard
  • 2 1/2 c. chicken broth
  • 1/2 c. milk
  • 3 Tbsp. chutney
  • 1 c. onion, chopped
  • 1/2 c. celery, minced
  • 1/4 c. flour
  • 1 Tbsp. curry powder
  • 1 bay leaf
  • 3 c. meat, cut into bite-sized pieces

Instructions

  1. Melt butter in a saucepan and add chopped onion, garlic, minced celery, and diced apple.
  2. Cook, stirring often, for about 5 minutes.
  3. Blend flour, curry powder, and dry mustard; sprinkle it over the vegetables.
  4. Stir to combine.
  5. Add bay leaf and chicken broth; rapidly stir with a wire whisk until mixture thickens.
  6. Let simmer for 15 minutes, stirring bottom often to prevent sticking.
  7. Add meat, milk, and finely chopped chutney; simmer for 4 to 5 minutes longer.
  8. Serve hot with rice.
