Ingredients

  • 1 1/2 cups celery
  • 1 cup onion
  • 1 cup carrots
  • 1/2 cup green pepper
  • 1 cup cabbage
  • 1 1/2 cups tomato juice
  • 4 cups water
  • salt and pepper
  • 1/4 teaspoon thyme
  • 1/2 teaspoon basil
  • 1 tablespoon parsley
  • 1/2 cup cooked rice

Instructions

  1. Dice all vegetables very small.
  2. Sauté celery, onion, carrots, and green pepper in butter for 15 minutes.
  3. Add cabbage and cook for 15 minutes longer.
  4. Add tomato juice, water, salt, pepper, thyme, basil, parsley, and cooked rice.
  5. Cook the mixture for 3 hours.
