Ingredients

  • 1 lb beef (lean)
  • 4 large onions (whole)
  • 1/2 cup vinegar
  • strips of pork fat
  • 1 can small tomato sauce
  • 6 potatoes, cut in half
  • 1/2 laurel leaf
  • 2 tbsp fat
  • 1 tsp pimientos
  • salt to taste

Instructions

  1. Insert strips of pork fat lengthwise into the beef.
  2. Place the meat, laurel leaf, tomato sauce, vinegar, salt to taste, and water to cover in a deep pot or pan.
  3. Cover and simmer until the beef is tender.
  4. Add potatoes, onions, and pimientos, then continue cooking.
  5. When most of the broth has evaporated and the potatoes are cooked, add the fat strips and stir well.
  6. Serve the meat sliced crosswise with the sauce and vegetables.
