  1. Slice potatoes thinly and cook in 1 inch boiling water until tender, about 5 minutes.
  2. Drain and reserve the potatoes.
  3. Cut some potatoes into chunks and add garlic, onion, bell pepper, stewed tomato liquid, bay leaf, basil, and thyme.
  4. Bring to a boil, reduce heat, and simmer covered for 10 minutes.
  5. Stir in mushrooms, zucchini, stewed tomatoes, and 4 tablespoons of parsley.
  6. Recover and simmer for an additional 6 minutes.
  7. Remove and discard the bay leaf.
