Hero-Toasted Cod With Lemon Rosemary features tender baked cod topped with a crunchy breadcrumb and walnut crust, infused with lemon and rosemary flavors, perfect for a light, flavorful meal.

Ingredients

  • 2 Tbsp butter
  • 1/4 cup whole-wheat bread crumbs
  • 1 oz chopped walnuts
  • 2 lemons (grated peel and juice)
  • 2 sprigs rosemary (stalks removed)
  • 2 Tbsp chopped parsley
  • 4 cod fillets (5 oz each)
  • 1 garlic clove minced
  • 1 small red chili diced
  • 23 Tbsp walnut oil
  • salad leaves

Instructions

  1. Melt butter in a large skillet.
  2. Remove the skillet from heat and add bread crumbs, walnuts, grated lemon peel, lemon juice, half of the rosemary sprigs, and half of the parsley.
  3. Press the bread crumb mixture over the top of each cod fillet.
  4. Place the fillets in a shallow, foil-lined roasting pan.
  5. Bake in a preheated oven at 400°F (200°C) for 25 to 30 minutes.
  6. In a bowl, mix garlic, remaining lemon peel and juice, the rest of the rosemary, parsley, and diced red chili.
  7. Beat walnut oil into the mixture until well combined to make a dressing.
  8. Drizzle the dressing over the cooked cod fillets immediately after baking.
  9. Transfer the fillets to serving plates and serve immediately with salad leaves.
