- Melt butter in a large skillet.
- Remove the skillet from heat and add bread crumbs, walnuts, grated lemon peel, lemon juice, half of the rosemary sprigs, and half of the parsley.
- Press the bread crumb mixture over the top of each cod fillet.
- Place the fillets in a shallow, foil-lined roasting pan.
- Bake in a preheated oven at 400°F (200°C) for 25 to 30 minutes.
- In a bowl, mix garlic, remaining lemon peel and juice, the rest of the rosemary, parsley, and diced red chili.
- Beat walnut oil into the mixture until well combined to make a dressing.
- Drizzle the dressing over the cooked cod fillets immediately after baking.
- Transfer the fillets to serving plates and serve immediately with salad leaves.
