Ingredients

  • 1 small eggplant (1 lb.), cut into pieces
  • 1 tsp. olive oil
  • 1 c. chopped onion
  • 2 c. green bell pepper
  • 1 c. cherry tomato halves
  • 1/2 c. mushrooms
  • 6 black olives
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. catsup
  • 1 Tbsp. minced garlic
  • 1/2 c. coarsely crumbled Feta cheese

Instructions

  1. Put eggplant in a 2-quart microwave-safe dish.
  2. Cover and microwave 6 minutes on High.
  3. Put oil, onions and peppers in same dish.
  4. Stir to mix; cover and microwave on High 4 or 5 minutes. Stir in eggplant and remaining ingredients, except Feta Cheese. Cover and microwave on High 6 to 8 minutes.
  5. Sprinkle cheese over top.
  6. Cover and let stand 5 minutes.
  7. Serves 6.
