Instructions
- Put eggplant in a 2-quart microwave-safe dish.
- Cover and microwave 6 minutes on High.
- Put oil, onions and peppers in same dish.
- Stir to mix; cover and microwave on High 4 or 5 minutes. Stir in eggplant and remaining ingredients, except Feta Cheese. Cover and microwave on High 6 to 8 minutes.
- Sprinkle cheese over top.
- Cover and let stand 5 minutes.
- Serves 6.
