Ingredients

  • 16 oz firm tofu
  • 1/2 tsp salt
  • 3/4 c milk
  • 1 to 2 Tbsp soy sauce
  • 2 oz Cheddar cheese
  • 1/2 c Parmesan cheese
  • 1/4 to 1/2 c bread crumbs

Instructions

  1. Cook the brown rice ahead of time; it needs 40 to 45 minutes.
  2. Preheat oven to 375°F (190°C).
  3. In a large skillet, heat 2 to 3 tablespoons of canola or olive oil over medium heat.
  4. Add chopped onions and cook until translucent, about 5 minutes.
  5. Add diced zucchini and cook until tender, about 5 minutes.
  6. Crumble the drained tofu into the skillet and stir well.
  7. Add salt (if not using soy sauce) and cook for another 2-3 minutes.
  8. In a bowl, mix milk with soy sauce to taste.
  9. Combine cooked rice, tofu mixture, and grated carrot (if using) in a large bowl.
  10. Pour the milk and soy sauce mixture over the rice mixture and stir to combine.
  11. Transfer the mixture into a greased baking dish.
  12. Sprinkle grated Cheddar cheese or Parmesan on top.
  13. Sprinkle bread crumbs evenly over the cheese.
  14. Bake in the preheated oven until golden brown and bubbly, about 25-30 minutes.
