Ingredients

  • 2 cups hash brown potatoes
  • 3 tablespoons vegetable oil
  • 2 tablespoons olive oil
  • 1 cup chopped green onion
  • 1/2 small green pepper
  • 1 small tomato
  • 2 tablespoons margarine
  • 5 eggs
  • 1 tablespoon water
  • salt

Instructions

  1. In a 10-12 inch nonstick skillet, heat the vegetable oil and olive oil.
  2. Add the hash brown potatoes and cook about 15 minutes, covered, stirring occasionally.
  3. Add chopped green onion, green pepper, and chopped tomato; sauté until done.
  4. Add margarine and scrambled eggs with water, season with salt, pepper, and garlic powder.
  5. Cook until eggs are set.
  6. Using a plastic spatula, cut the scramble into 4 sections, turn over, and cook until done.
  7. Optional: sprinkle with cheese before serving.
