- In a 10-12 inch nonstick skillet, heat the vegetable oil and olive oil.
- Add the hash brown potatoes and cook about 15 minutes, covered, stirring occasionally.
- Add chopped green onion, green pepper, and chopped tomato; sauté until done.
- Add margarine and scrambled eggs with water, season with salt, pepper, and garlic powder.
- Cook until eggs are set.
- Using a plastic spatula, cut the scramble into 4 sections, turn over, and cook until done.
- Optional: sprinkle with cheese before serving.
