Instructions

  1. Preheat oven to 350°F.
  2. Grease a 9-inch pie plate.
  3. Chop 1/2 cup dried apricots; set aside the remaining for decoration.
  4. In a medium bowl, combine chopped apricots, coconut, flour, and grated orange peel; toss to mix well.
  5. In a large bowl, beat eggs, baking mix, milk, melted butter, granulated sugar, and vanilla extract until thoroughly blended.
