Ingredients

  • 1 large package lemon jello
  • 1/2 cup boiling water
  • 1/2 pint sour cream
  • 1/2 cup mayonnaise
  • 1 pound small curd cottage cheese
  • 2 carrots, finely grated
  • 1 green pepper, finely grated
  • 1 large cucumber, finely grated
  • green onions, finely chopped
  • dash of salt

Instructions

  1. Mix the lemon jello with 1/2 cup boiling water until dissolved.
  2. Let the mixture cool slightly.
  3. Combine the dissolved jello with sour cream, mayonnaise, and salt.
  4. Add the cottage cheese, grated carrots, grated green pepper, grated cucumber, and chopped green onions.
  5. Mix well and pour into a fancy mold.
  6. Refrigerate until set, which happens quickly.
