Ingredients

  • 1 lb. ground beef
  • 2 Tbsp. chili powder
  • 1 cup mild taco sauce
  • 1 (4 oz.) can chopped green chilies, drained
  • 1 can corn
  • 1/2 tsp. salt
  • 1/4 cup scallions
  • 1 cup black olives
  • 1 cup Monterey Jack cheese
  • 1 cup tortilla chips
  • 1/2 cup sour cream

Instructions

  1. Cook the ground beef in a skillet until browned; stir in chili powder and cook for 1 minute.
  2. Remove from heat and stir in taco sauce, drained green chilies, and salt.
  3. Combine the corn and half of the scallions in a bowl.
  4. Layer half of the corn mixture in a 2-quart casserole dish.
  5. Add half of the beef mixture on top of the corn layer.
  6. Sprinkle half of the black olives and half of the Monterey Jack cheese over the layers.
  7. Repeat the layers with the remaining corn mixture, beef, olives, and cheese.
  8. Cover and bake in a 400°F oven for 20 minutes.
  9. Top with crushed tortilla chips, sour cream, and remaining scallions before serving.
