Mexican Corn Bread With Beef combines savory ground beef, cheesy layers, and spicy jalapenos in a hearty, flavorful baked dish perfect for family dinners or gatherings.

Ingredients

  • 1 lb. ground beef
  • 1 c. cornmeal
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs
  • 1 c. milk
  • 1 can creamed corn
  • 1/3 c. oil
  • 1/2 c. shredded cheese
  • 1 small onion
  • chopped jalapeno peppers

Instructions

  1. Brown the ground beef in a skillet.
  2. Drain excess fat from the beef.
  3. In a bowl, combine cornmeal, baking soda, salt, eggs, milk, creamed corn, and oil.
  4. Heat a large iron skillet and pour half of the batter into it.
  5. Layer the cooked beef, shredded cheese, chopped onion, and chopped jalapenos over the batter.
  6. Pour the remaining batter on top of the layered ingredients.
  7. Bake at 350°F for 50 minutes until golden and cooked through.
