Ingredients

  • 3 Tbsp. oil
  • 1 c. long grain rice
  • 2 c. water
  • 1 c. chili salsa
  • 1/2 c. chopped green pepper
  • 1 small onion, chopped
  • 1 clove garlic, minced

Instructions

  1. In a 12-inch skillet, heat oil and add rice.
  2. Cook until golden brown, stirring often.
  3. Stir in remaining ingredients and bring mixture to a boil.
  4. Reduce heat, cover, and simmer for 15 to 20 minutes, or until rice is tender.
  5. Season to taste and serve with additional salsa if desired.
