White Corn Salsa

- Place the white kernel corn, black beans, diced tomatoes with chilies, chopped cilantro, and their juices into a large bowl and stir until well combined.
- Strain the mixture in a colander for 5-10 minutes to remove excess liquid.
- Return the mixture to the large bowl and add salt and sugar to taste. Stir thoroughly.
- Return the mixture to the colander and strain for an additional 10 minutes.
- Transfer the mixture back to the bowl and add 2 tablespoons of olive oil. Mix thoroughly.
- Refrigerate until ready to serve and enjoy with chips or as a side dish.
