A vibrant and fresh white corn salsa packed with flavors of tomatoes, cilantro, and beans, perfect for snacking or serving at parties and gatherings.

Ingredients

  • 1 can white kernel corn
  • 1 can black beans
  • 2 cans diced tomatoes with chilies
  • 1/2 cup chopped cilantro
  • Salt to taste
  • Sugar to taste
  • Olive oil

Instructions

  1. Place the white kernel corn, black beans, diced tomatoes with chilies, chopped cilantro, and their juices into a large bowl and stir until well combined.
  2. Strain the mixture in a colander for 5-10 minutes to remove excess liquid.
  3. Return the mixture to the large bowl and add salt and sugar to taste. Stir thoroughly.
  4. Return the mixture to the colander and strain for an additional 10 minutes.
  5. Transfer the mixture back to the bowl and add 2 tablespoons of olive oil. Mix thoroughly.
  6. Refrigerate until ready to serve and enjoy with chips or as a side dish.
