Ingredients

  • 1 lb. extra lean ground beef or ground turkey
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 green pepper, diced
  • 2 medium potatoes, diced
  • 1 (8 oz.) can tomato sauce
  • 2 cans (2 cups) water
  • 2 tsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. cumin
  • 1/4 tsp. black pepper
  • 1 (12 oz.) can whole kernel corn, drained

Instructions

  1. Cook ground beef or turkey and chopped onion in a large nonstick skillet over medium heat.
  2. Stir occasionally while cooking until the meat is lightly browned and the onion is soft.
  3. Drain off excess fat from the skillet.
  4. Add all remaining ingredients except the corn to the skillet.
  5. Cover and simmer over low heat, stirring occasionally, until the potatoes are tender, about 30 minutes.
  6. Add more water if needed during cooking.
  7. Stir in the drained corn and cook just long enough to heat through.
