Ingredients

  • 1 lb dried pinto beans
  • 5 cups water
  • 6 slices bacon, finely chopped
  • 1 large onion, chopped
  • 1/2 green pepper, chopped
  • 1 1/2 tablespoons ground cumin
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper

Instructions

  1. Sort and wash the dried pinto beans.
  2. Place the beans in a Dutch oven.
  3. Cover the beans with water 2 inches above the beans.
  4. Cover and bring the water to a boil.
  5. Boil for 1 minute, then remove from heat and let stand covered for 1 hour.
  6. Drain the beans and return them to the Dutch oven.
  7. Add 5 cups of water and the remaining ingredients: chopped bacon, chopped onion, chopped green pepper, ground cumin, chili powder, salt, and pepper.
  8. Bring to a boil, then cover and reduce heat to simmer.
  9. Cook for 1 1/2 hours or until the beans are tender.
  10. Serve the beans with a slotted spoon.
