- Spread each softened flour tortilla evenly with the avocado mixture, leaving within 1/2 inch of the edge.
- Arrange slices of cooked roast beef or turkey, leaf lettuce, shredded Monterey Jack cheese, and alfalfa sprouts over the avocado mixture on each tortilla.
- Spoon on the desired amount of salsa or taco sauce. If making ahead, omit the salsa and add it just before serving.
