Ingredients

  • 1 large zucchini, shredded
  • 1 medium sweet onion, shredded
  • 1/3 cup black olives, sliced
  • 1 cup salsa or taco sauce
  • 1 carrot, shredded
  • 2 tomatoes, diced
  • 2 avocados, diced
  • small amount paprika

Instructions

  1. Mix shredded zucchini, shredded onion, shredded carrot, sliced black olives, diced tomatoes, and diced avocados in a bowl.
  2. Add salsa or taco sauce and a small amount of paprika, then thoroughly mix everything together.
  3. Use as a salad, stuffing in pita bread sandwiches, or as a filling for tacos or enchiladas.
